Why There Are Multiple HACCP Courses in Ireland
HACCP courses in Ireland are structured across three levels because food safety knowledge and responsibility varies significantly by role. A kitchen porter starting their first week in a restaurant needs different food safety knowledge from a head chef who is responsible for the entire food safety management system. A front-of-house waiting staff member needs different training from a food production manager in a manufacturing facility.
The Food Safety Authority of Ireland (FSAI) addresses this through its three-level training framework, which defines the food safety competencies expected at each level and maps those competencies to different roles and stages of employment. Acorn Star’s HACCP courses in Ireland are built directly around this framework ensuring that every certificate we issue meets the FSAI’s standard for the relevant level.

Frequently Asked Questions
Do I need to complete HACCP courses in order Level 1 before Level 2?
There is no formal prerequisite requiring Level 1 completion before Level 2. Many experienced food industry workers who are new to formal certification complete Level 2 directly. However, if you are entirely new to the food industry, completing Level 1 first provides a useful foundation that makes Level 2 content more accessible. Our Level 1 & 2 Bundle covers both in sequence.
Are all HACCP courses in Ireland online now?
The majority of HACCP courses in Ireland are now available online, and online delivery has become the standard approach for most food businesses. Some providers also offer classroom-based options for learners who prefer group learning. All Acorn Star courses are delivered online. Online courses from accredited providers carry exactly the same legal validity as classroom courses and are fully accepted by EHOs across Ireland.
How long do HACCP certificates from these courses last in Ireland?
There is no legally mandated expiry date for HACCP certificates in Ireland. The FSAI recommends refreshing training periodically, and industry practice treats certificates as valid for two to three years. Our Free LMS* can set automated renewal reminders so your team’s certifications never lapse without notice.
Can I buy multiple HACCP course licences for my team at once?
Yes. Business customers can purchase multiple course licences in a single transaction and assign them to team members through our Free LMS*. Volume pricing is available for larger teams contact us to discuss rates for your specific team size.
Is Level 3 necessary if I already have Level 2?
If your role involves management or supervisory responsibility for food safety including developing or maintaining a HACCP plan, training or supervising food handling staff, or managing the food safety system in any capacity then yes, Level 3 is necessary. Level 2 is the food handler standard; Level 3 is the management standard. Many people hold both.

“But my head chef already has a food safety certificate why does he need more training?” This question comes up repeatedly when food business owners review their training obligations. The certificate on the staff room wall shows HACCP Level 1 or Level 2, the legal box appears ticked, and surely that’s enough?
Not quite. In fact, not even close.
Here’s the reality that catches many Irish food businesses off guard: the legal requirement isn’t simply to have trained staff it’s to ensure staff are “supervised and instructed and/or trained in food hygiene matters commensurate with their work activity.” That final phrase is crucial, and it’s where many businesses fall short without even realising it.
Your head chef, sous chef, kitchen supervisor, or anyone managing food safety in your operation isn’t performing the same role as a line cook or food handler. They’re not just cleaning surfaces, monitoring temperatures, and following procedures someone else created. They’re designing those procedures, troubleshooting when things go wrong, training others, making critical food safety decisions independently, and ultimately bearing responsibility when inspectors arrive.
